A thick cabbage wedge over charcoal — seasoned with UNU — does something remarkable. The outer leaves char and caramelise. The inside steams and softens. Ten minutes. The most surprising thing you will cook this summer.
Ingredients
- 1 small green cabbage, cut into 4 thick wedges (keep the core intact)
- 2 tbsp UNU all-purpose seasoning
- 3 tbsp olive oil
- Juice of 1 lemon
- Flaky salt to finish
- Optional: plain Greek yogurt to serve
Instructions
- Prep: Cut cabbage into 4 wedges keeping the core intact — this holds each wedge together on the grill. Brush all sides with olive oil and season heavily with UNU.
- Grill on direct high heat: Flat-side down on a hot charcoal grill. Do not touch for 4–5 minutes — you want genuine char. Flip to the other flat side, another 4 min.
- Finish: Move cut-side up, squeeze lemon over, close the lid 2 more minutes.
- Serve: Flaky salt. A spoonful of Greek yogurt alongside makes it exceptional.
