Ingredients
- 1 block (200g) feta
- 500g cherry tomatoes
- 4 cloves garlic
- 1/3 cup olive oil
- 1 tbsp UNU all-purpose seasoning
- 300g pasta
- Fresh basil
Instructions
- Heat oven to 400F (200C). Add tomatoes, garlic and olive oil to a baking dish. Nestle the feta block in the centre. Sprinkle with UNU.
- Bake 35 minutes until the tomatoes burst and the feta is golden and soft.
- Meanwhile, cook the pasta and reserve a cup of pasta water.
- Stir the feta and tomatoes into a creamy sauce, loosening with pasta water.
- Toss with the pasta and finish with torn basil.
Tips
- Use full-fat block feta, not crumbled — it melts creamier.
- A pinch of chili flakes adds heat.
- Save the pasta water; it makes the sauce silky.
