Ingredients
- 2.5–3 kg (5–6 lb) bone-in pork shoulder (pork butt)
- 3 tbsp UNU Everyday Spice Blend
- 2 tbsp yellow mustard (binder)
- 1 tsp coarse salt
- Apple cider vinegar in a spray bottle (optional)
Instructions
- Night before (recommended). Pat the pork shoulder completely dry. Coat all surfaces with yellow mustard as a binder. Apply UNU generously — press the spice firmly into every surface. Wrap tightly and refrigerate overnight.
- Day of — preheat your smoker or oven to 300°F (150°C). Remove pork from the fridge 30 minutes before cooking.
- Cook 3 hours uncovered. If smoking, spritz with apple cider vinegar every hour to encourage bark formation. Target internal temp: 165°F (74°C).
- Wrap in foil with a splash of apple juice or water. Return to smoker at 275°F (135°C).
- Cook 2–3 more hours until internal temperature reaches 200–205°F (93–96°C). The bone should wiggle freely with no resistance.
- Rest 45 minutes — do not skip this step. Resting allows juices to redistribute through the entire shoulder. Cutting early means losing them all to the board.
- Shred. Pull apart with two forks or bear claws. Toss the pulled meat with 1 tsp UNU and any reserved juices from the foil.
