Ingredients
- 4 chicken thighs or breasts
- 1 tbsp UNU all-purpose seasoning
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated parmesan
- Fresh basil
Instructions
- Season the chicken with UNU. Sear in olive oil until golden, 4-5 minutes per side. Remove.
- Add garlic and sun-dried tomatoes to the pan, cook 1 minute.
- Pour in the cream and parmesan, stir into a sauce.
- Return the chicken, simmer 8-10 minutes until cooked through and the sauce thickens.
- Finish with fresh basil. Serve over pasta or with bread.
Tips
- Use the oil from the sun-dried tomato jar for extra flavour.
- Thighs stay juicier than breasts.
- Loosen the sauce with a splash of stock if it gets too thick.
