Recipe

Ingredients

  • 1 block (200g) feta
  • 500g cherry tomatoes
  • 4 cloves garlic
  • 1/3 cup olive oil
  • 1 tbsp UNU all-purpose seasoning
  • 300g pasta
  • Fresh basil

Instructions

  1. Heat oven to 400F (200C). Add tomatoes, garlic and olive oil to a baking dish. Nestle the feta block in the centre. Sprinkle with UNU.
  2. Bake 35 minutes until the tomatoes burst and the feta is golden and soft.
  3. Meanwhile, cook the pasta and reserve a cup of pasta water.
  4. Stir the feta and tomatoes into a creamy sauce, loosening with pasta water.
  5. Toss with the pasta and finish with torn basil.

Tips

  • Use full-fat block feta, not crumbled — it melts creamier.
  • A pinch of chili flakes adds heat.
  • Save the pasta water; it makes the sauce silky.
